Kidney Kind Recipes - Veggy!

Leek with pepper & cashew-nut pasta (serves 2)


Ingredients

60g leeks, chopped
60g mixed peppers
1 medium onion, chopped
112g unsalted cashew nuts
1/4 tsp each of tarragon & chives
230 mls vegetable stock
120g dry pasta

Place leeks, peppers and onion into stock and bring to the boil, add the herbs and leave to simmer for 15-20 minutes. Meanwhile cook the pasta in boiling water until firm to bite. Drain the pasta and add the cashew nuts and a pinch of seasoning.


*I was surprised to see the cashew nuts in this recipe as I always thought they were high in calcium, presumably this small amount split between 2 people is ok.

I got the recipe from a booklet called 'Food with thought - the everyday kindney-kind recipe collection'.

I got the book free at my hospital.
It was sponsored by an educational grant from Amgen.
It's written by renal dieticians and they say that when using the recipes you should take into account the other meals you are having during the day to ensure you do not exceed your recommended nutrient intake.
